recipe review: sausage and kale stew with olive oil mashed potatoes

i'd had my eye on this recipe for a while, actually. once i remembered that i had a pound of "ground"/"loose" italian sausage in the fridge, i realized the time was right to try this one out.

i used 3 garlic cloves (shocking, i know) and reduced the water from 1 cup to about 3/4 cup. i have a 4-quart slow cooker, so i knew that using more water would make this more soupy than i wanted. instead of the ~7 cups of kale called for, i used a package of this kale blend and it worked out great. i set the timer for about 7.5 hours on low and the potatoes were perfectly tender when i took them out to mash them.

i'm not sure i'd make the mashed potatoes with olive oil again, though. it was my first time using olive oil in mashed potatoes and the taste and consistency was a bit different than i'm used to. the stew was great, though, so i can totally see myself making it again.
