who goes grocery shopping after work on a friday and then comes home to do some meal prep? o hai, it me. this is one of 2 new to me recipes that i tried out this weekend. i'd originally copied this from jacques pepin's cookbook and decided to pull it out of a recipe binder while trying to think through veggie ideas that weren't just sauteed spinach or steamed broccoli or green beans. the recipe in that youtube video is slightly different from the one i have, which calls for a 16oz can of chickpeas, a pound of baby spinach, canola oil instead of olive oil, and no vinegar. of course i added a clove of minced garlic because obviously jacques and/or his recipe tester/book editor forgot to include garlic somehow. 😊
i had 2 servings as a side dish for dinner on friday and saturday and took the rest for my lunch today. i am so making this again, y'all. i may try it with cannellini beans instead of chickpeas next time.
fun fact: i started typing "chicken" every time i typed "chickpeas" in this post. carnivorous habits die hard, i guess.
