if you're like me, you rarely think about cooking with cranberries until the holiday season. even then, i don't usually make cranberry sauce because i can honestly take it or leave it most of the time. kinda odd, then, that this recipe struck enough of a chord for me to add it to my files and make it for dinner a few nights ago. it may have also helped that the only ingredient i needed to buy was the cranberries (i used frozen ones that i thawed in the fridge).
i used about a 1/4 teaspoon of dried thyme instead of fresh, and eyeballed the salt and pepper as usual. not sure if i'd make this one again, to be honest. it wasn't bad, but i felt like it needed something. maybe some garlic? i know - for once, i didn't add any garlic to a recipe and that may have been the game changer. i still have 1/2 a bag of frozen cranberries left, along with some more chicken thighs, so unless i figure out something else out to do with the cranberries, i may end up making this again after all.
