i knew i had a relatively empty schedule saturday morning/afternoon, so it was a perfect time for me to get a bit of meal prep done for the coming week. for breakfast, i revisited off this sausage & cheese scramble recipe that i've made off and on for years. i had two entrees in mind for lunch and dinner. this curried chicken stew was dinner for tonight and will likely be dinner for the rest of the week. i skipped all the garnishes and i think i'd add a bit more coconut milk if i made this again. i have a 4 quart crockpot and set it for 4 hours on high, turning everything off after about 3.5 hours. oh, and i seasoned the chicken with salt and pepper before browning it, and added a minced garlic clove to the carrots & onion.
the sausage and potato pan roast will probably be used for lunches this week. i had a few bites yesterday and tonight and i like where the flavors are going. i didn't have any lemons on hand but i did have a lime, so i used that instead. i opted to peel the shallots instead of leaving them unpeeled as directed by the recipe, because i didn't want to have to worry about peeling them after the fact.
